Eccles cakes

My first time of making Eccles cakes and they turned out a success.

Sainsbury’s puff pastry
250grms currants
50g melted butter
150g Demerara super
1/2 tsp ground cinnamon

Mix above ingredients together, Roll out puf pastry, Cut out as many rounds as you can, Put a table spoon of mixture in the middle of round brush edges with water. Put another round of pastry on top seal edges . And place on a greased tray. Do the same with all rounds . Then brush top of round with milk sprinkle on granulated sugar on each round. Cut slit in the top of each cake. And bake in oven at 190 c. For 15 to 20 minutes.

There you have some delicious Eccles cakes.



My black currant and mint tea loaf was ok. A bit crumbly. Could do better next time

All round to Linda's for tea! I can't remember the last time I had an Eccles cake - I really fancy one now 😁
